Baking and gardens totally go together, and for The Great British Baking Show’s sixth episode this season, it’s time for “Botanical Week.”

If nothing else, The Great British Baking Show has really expanded its oeuvre this season when it comes to themes for each week’s challenges. After a relatively tame week for pastry, it’s back to the different themes.

It’s Botanical Week this week, of all things! So, what exactly does that mean?

It appears, based on the official synopsis from PBS’ accompanying press page on the issue, that the idea is not necessarily flower flavors so much as a very loose category that encompasses several different things:

"“Monitor the remaining seven as they strive to give their bakes maximum botanical taste. The signature demands sharp citrus flavors; the technical, a leafy challenge; and the final, three tiers of flavored sponges and stunning floral designs.”"

If we had to guess, the “leafy challenge” refers to the “herby bread” promised in the preview from last week’s episode. Since it’s also a bread challenge and last week’s technical came from Mary Berry, it seems wise to bet that Paul Hollywood’s the source of this week’s technical recipe.

In the signature, “sharp citrus flavors” could refer to pretty much anything, but since the showstopper is cake and the technical is a bread, it could be a pastry or pie situation for the signature. And yes, the showstopper’s a cake challenge. “Sponges,” anyone? Expect at least some discussion of the different kinds of sponge cakes; as Food52 reminds us, there is a lot of room in that category.
