With both professional and home bakers remaining, this season’s Spring Baking Championship is providing to be quite a battle. So far the bakers have tackled bunny cakes, destination donuts and Kentucky Derby desserts. What’s next on the list- springtime remodeling.

According to Food Network, episode 4 synopsis serves up the following:

"When the weather gets nice, it’s time for some remodeling! The six remaining bakers attempt to lighten up a dense, dark brownie and give a classic Napoleon a springtime twist."

Based on this blurb, I’m not understanding the springtime remodeling motif. Personally, I want my brownies chocolatey and decadent. If I wanted something light on chocolate, I might eat a chocolate chip cookie.

As for the Napoleon springtime twist, my best guess is that this dessert will test the bakers. Napoleons are generally a stacked pastry filled with cream, custard or even jelly. Usually, they are rectangular in shape. The key to a tasty Napoleon is the balance of flaky pastry to filling. Want to take bets on how many bakers’ Napoleons crumble and fall?
