Strawberry Rhubarb pie

Here’s a straight-up classic strawberry rhubarb pie from King Arthur Flour. You will need sugar, all purpose flour, salt, butter, and fresh or frozen rhubarb and strawberries for the filling.

You don’t usually see a lot of pies filled with just rhubarb or strawberry. They almost always come together. Cooked strawberries are almost cloyingly sweet, and rhubarb is outright bitter. So they balance perfectly. And really what else are you going to do with rhubarb? (I know, I can make, jams, jellies, preserves AND sauces. So many applications for rhubarb.)

Certainly don’t eat the leaves, because they rhubarb leaves are poisonous. No, I’m not being facetious, they contain oxalic acid. Do not eat. The stalks are fine though, and they’re really high in vitamins C and A.

I’m really looking forward to making one of these when my CSA starts up. Farm-fresh rhubarb and strawberries… if the berries even make it out of the car before they reach my tummy. That’s definitely a challenge for me, in addition to getting strawberry stains out of the upholstery. I’ll probably end up using store-bought strawberries with my farmstand rhubarb for my pie.

Recommended ice cream pairing: Ginger, if you can find it. Peach ice cream is my second recommendation. If not, definitely vanilla bean.
