Simple Green Meals by Jen Hansard

Jen Hansard has worn plenty of hats, but she’s best known as the co-founder of Simple Green Smoothies, a great resource for anyone looking to revitalize their health by drinking their nutrients. Since realizing the healing power of green smoothies, Hansard has been doing everything she can to share the benefits with as many people as possible—even speaking at various events and bringing her knowledge to classrooms.

Of course, her green smoothie challenge is only the first step to improving your well-being. Hansard also acknowledges the need to enact diet changes to optimize health, and she has plenty of suggestions on how to do so in her cookbook, Simple Green Meals.

Much like Simple Green Smoothies, Simple Green Meals encourages users to avoid falling for “fad diets” and to stop restricting their calorie intake. Instead of making dieting a miserable—and sometimes even dangerous—experience, Hansard wants her followers to embrace eating food. Of course, that food needs to be natural and clean.

Offering 150 different recipes, Simple Green Meals strives to get users to “eat the rainbow” of fruits and vegetables, packing in all the nutrients they can during every meal. Every recipe is vegetarian, forcing cooks to get creative in the kitchen and rethink some of the foods they’ve been putting into their bodies for so long.

Anyone looking to transition to a more plant-based diet should definitely add Simple Green Meals to their shopping lists. In addition to suggesting a variety of vegetarian meal ideas, the book also provides strategies for incorporating this lifestyle, even for those who think they’re too busy to do so.
