Chocolate Cream Pie

Unlike the rest of my family, when I was a kid, I was not completely crazy about chocolate. Not like I hated it; I loved brownies and chocolate chop cookies, but I never ate chocolate ice cream. And I never like, sat down to eat a chocolate bar. That sure changed!

This chocolate cream pie from King Arthur Flour is a chocolate lover’s dream. It looks so perfectly simple: chocolate, pie crust, and whipped cream. The filling calls for butter, semisweet chocolate and unsweetened cocoa, vanilla extract, granulated sugar, cornstarch, salt, egg yolks, heavy cream, and milk. You also add espresso powder to make the chocolate taste extra rich and chocolatey.

The topping is a straight-up whipped cream, with just heavy cream, confectioners’ sugar, and vanilla. But if that’s too boring for you, try one of these whipped cream variations from The Splendid Table. Choose from cocoa, orange blossom, mint, halva, and more. (Halva whipped cream? Yes, please!)

Serve with a fresh pot of nice, strong coffee. I am kind of going into a reverie just thinking about it.

Recommended ice cream pairing: I can’t think of a flavor ice cream that wouldn’t be awesome with this chocolate cream pie. But coffee ice cream is the best.
