Blueberry Cheesecake Tart

This no-bake Blueberry Cheesecake Tart from Annie’s is on my must-make list. It reminds me of the first time I met cheesecake and fell head over heels in love. I was in Colonial Williamsburg, and the cheesecake contained blueberries. Ah, summer romance.

This crust for this dessert is easy. You just need to smash together graham crackers (like Annie’s Honey Bunny Grahams!) with brown sugar and butter. For the filling, you mix together cream cheese, icing sugar, sour cream, vanilla, lemon zest, and whipped cream. Then let it set and top with blueberries, blackberries, or strawberries. Or just go for all three, because yum.

So what is icing sugar? It’s what Americans call powdered sugar or confectioner’s sugar. And in case you’ve heard of caster sugar and wonder what that is, it’s very finely milled version of granulated sugar. Granulated sugar is just regular table sugar. Caster sugar, also known as superfine sugar in the States, is nice to sprinkle on pie crust before baking to make it crackly and shiny.

Recommended ice cream pairing: If you’re going to actually eat ice cream with this cheesecake, choose a berry flavor that’s different than the berries you used for the topping.
