Mascarpone and Cranberry Tart With Pecan Crust
This mascarpone and cranberry tart with pecan crust is a unique dessert from Diamond Nuts. The tartness of fresh cranberries is perfect with the sweet mascarpone cheese. Cranberries are one of my favorite fruits. They’re so sour and tangy. There’s really nothing else like them. Cranberries keep forever in the fridge, too, probably because of their demonstrated antibacterial properties.
The nutty crust contains flour, sugar, salt, nutmeg, pecans, butter, and an egg yolk. Its filling sounds divine. Combine mascarpone cheese, sugar, vanilla and heavy whipping cream for the base. The topping is a quick compote of cranberries (fresh or frozen, not dried), brown sugar, apple cider, orange zest, and spiced up with nutmeg and cinnamon.
This tart is perfect for Thanksgiving, but there is no way I’m waiting that long to try it. And I will probably make a double recipe of the cranberry compote and serve it instead of cranberry sauce along with the turkey and fixins.
Recommended ice cream pairing: Try it with orange sorbet or Italian ice, if you must have a frozen treat with this tart. I think it looks complete without, to be honest. I would never lie about pie.
