Apple and Almond Hand Pies

These little round apple and almond hand pies from Fisher Nuts are freakin adorable. Most hand-held pie recipes are for semi-circular or rectangular pastries, but neither are worthy of Pi Day.

This is not your average apple pie, and not just because of its size and cuteness. It’s nuts! Because of almonds! The filling calls for butter, apples, sugar, lemon zest and juice, vanilla extract, cinnamon, an egg, and sliced almonds.

Take the prepared pie dough and cut out 3 1/2-inch rounds. (That’s diameter, not circumference, which is as much math as I’m going to do right now.) Then, you spoon the filling onto one dough round, cover it with another round, and seal the dough pieces together with beaten egg. These delicious little flying saucers will try to fly right out of your oven into your mouth. Try to resist, because burning your tongue on pie on Pi Day would be a tragedy of the highest degree.

Recommended ice cream pairing: Go nuts and pair them with pistachio ice cream. Or, since they’re individual sized, buy those little chocolate ice cream cups like kids get in elementary school to pair with your hand pies.
