Tequila-Drunken Shrimp and Scallop Skewers

Nuts about seafood and south-of-the-border flavors? Try these drunken shrimp and scallop skewers from Better Homes and Gardens. They’re marinated in everyone’s favorite frenemy, tequila. The recipe includes a fresh and crunchy side, jicama slaw.

  • olive oil
  • fresh oregano
  • sugar

  • paprika
  • jicama
  • avocado
  • fresh cilantro
  • salt
  • black pepper

Worried about choosing high-quality, fresh seafood? Whether you’re buying shrimp, scallops, mussels, tuna, snapper, crab, or sole, follow the advice of the Food and Drug Administration regarding how to safely buy and serve seafood. Also, if you have the privilege of living near a real fishmonger–that’s a store devoted to buying fish and seafood–ask them for advice. If it’s a reputable place and it smells like the sea, excellent. If you walk into the seafood store and it smells like old tuna salad, turn around and shop somewhere else.

A note on jicama: It’s pronounced “HIH-kama.” Jicama is a mild member of the radish family, and has a taste and texture similar to water chestnuts. Try it, you’ll like it! If you can’t find jicama, substitute radishes and cucumbers. It’s not exactly the same, but it will be yummy.

Before serving, taste the shrimp and scallops. If the tequila flavor isn’t strong enough, splash on some more tequila. This is a boozy snacks Grammy party, after all! For that matter, if you want to go totally overboard like the proverbial major label recording artist, serve shot glasses of tequila on the side for your guests to dip the seafood into. You’ll be as blasted as a Grammy ceremony audience member in no time!
