10. Pimento Cheese Potato Bites

I haven’t made these, but everything else I have tried from Smitten Kitchen has been spot on and good enough that I excitedly bought her cookbook. If you’re not familiar, Deb Perelman makes the things she wants to eat (and that I want to eat) in her small New York City kitchen. You don’t even need her luscious photo to drool over this snack, just the words Pimento Cheese Potato Bites kicks in my salivary glands. In the directions for this one she uses the words melty and sizzling. MELTY AND SIZZLING PEOPLE, RUN TO THE STORE FOR THE INGREDIENTS.

Cheese! Mayo! (Do not fear the mayo, it melds seamlessly into the goo that is pimento cheese.) Potatoes! Little bits of minced scallions! These are the things that transform a simple Southern classic that I would be shoveling into my mouth while more picky people are debating the authenticity of calling it pimento cheese due to its ratio of ingredients. The potato prep sounds a bit fiddly, but it can be done ahead of time. Beyond that it’s just squishing things together then into your precious scooped out baby spuds, then baking into cheesy potato nirvana. I’m predicting heaven in a single bite.
