2. Refried Glazed Doughnuts

In my family it was my immigrant grandmother on my mother’s side who was the totally weird ideas about food genius. There are two things I distinctly remember as being “hers” that we all loved. The first one was an egg sandwich made with toasted bread surrounding a scrambled egg cooked like a pancake and then slathered with apricot jam. Just typing about it makes me crave it.

Her other mad food scientist creation was the refried glazed doughnut. Yes, I know that doughnuts are already fried. It doesn’t matter, these things are utterly amazing. This works with any glazed doughnut. From fresh Krispy Kremes to frozen doughnuts that come in individual little baggies in a box to the day old grocery store doughnuts in the clearance section.

This isn’t one of the complicated recipes I mentioned. Just take a nonstick frying pan, heat on low and add a little oil. Pop in your doughnut (it can be frozen when you do this) and have some patience. After a while on the edges of the doughnut you’ll see that the sugar is bubbling.

You want to get each side of the doughnut a caramelized golden to light brown. You can sometimes tell by smell or you can just peek underneath to check how it’s doing. Flip it over and do the same thing to the other side. Do not use medium heat because you’ll reach burnt sugar stage before you even know it.

The downside is that you will have to fry these right before serving. However, the crunchy caramelized coating that has a lingering stickiness with the soft doughnut inside will have people clamoring for more. Elderly Chinese ladies are the best.
