3. Oven-Fried Buffalo Wings

I’ll admit that I have not tried this recipe out yet. I can tell you what a huge fan I am of J. Kenji López-Alt and his Food Lab endeavors at Serious Eats. His willingness to hash out a recipe by using crazy good chef skills combined with a deep dive into science while keeping a skeptical eye on how claims translate into practical cooking is beyond compare in my mind. He’s a one man cooking band that I will never stop listening to.

I cook a lot of complicated things and am willing to try all sorts of methods. The one thing that I don’t do often is deep frying. The vast amount of oil it uses and then discards just doesn’t sit well with my miserly self. Plus actually doing the deep frying yourself really ruins the illusion that something isn’t THAT bad for you. That makes his recipe for Oven-Fried Buffalo Wings exceptionally attractive.

López-Alt’s careful recipe development and testing process even included comparison to the real fried deal. The secret ingredient is an unexpected one, baking powder. A fair warning, this recipe requires some work ahead of time and resting before frying. Sounds like an acceptable tradeoff for not having to have oil splatter burns to me.
