4. Goat Cheese and Strawberry Breakfast Tarts

These things are Poptarts who have grown up and gone on to finish graduate school. Saveur’s Goat Cheese and Strawberry Breakfast Tarts are definitely not just for breakfast. It’s a sophisticated combination where the tangy goat cheese helps cut through the sugary strawberry jam.

Because I’m a crazy cooking and canning food obsessive, I actually used homemade jam for these. Specifically I use balsamic strawberry jam, but other varieties that would work well are lapsang souchong strawberry jam and black pepper strawberry jam. If these flavors sound good, but you’re not a jam maker you can approximate them using store-bought jam. Just add a dash of balsamic vinegar (not too much that you make the jam watery), black pepper to your jam until you get that slightly spicy hit, or heat the jam up (without the metal lid) in the microwave with a smoky lapsang souchong teabag or two to infuse it with flavor (remember to let the jam cool off before making your tarts).

These would work well with other jams too. The recipe is easier than you might think since the dough comes together in a food processor. You can make the dough ahead of time if that helps. Even if some of the insides ooze out, nobody will notice because they’ll be too busy inhaling their tarts.
