Yoren

A sworn brother of the Night’s Watch, Yoren has it better than most. His job description as a “Wandering Crow” entails quite a bit of travel, so at least he’s not stuck at Castle Black permanently. Instead, he travels the Seven Kingdoms to recruit men—as volunteers or criminals—for the Watch.
Early on, Yoren plays a part in Arya’s storyline. He shields her from her father’s execution, and takes her under his protection afterwards. Yoren insists that Arya disguise herself as a boy in both looks and manner for her safety, and so he can drop her at Winterfell on his way to the Wall. Should any of his recruits find out her true identity, she would be at their mercy. This is the beginning of Arya’s journey through multiple identities. And it’s from Yoren that Arya takes up the habit of reciting her kill list as she’s falling asleep.

Before Yoren can return Arya to the presumed safety of Winterfell, he’s killed by Ser Amory Lorch, a Lannister man hunting for Gendry. Yoren worked to protect Arya and Gendry both, and died fighting for their lives. The man had quite the streak of loyalty, and likely wouldn’t have bowed to Lannister men regardless of who was in his charge. His vows were to the Night’s Watch, but it seems that a bit of his heart was reserved for the Starks as well.
